Directions

  1. Preheat oven to 350 degrees F. In a large mixing bowl, combine sour cream and condensed soup. Stir in the frozen potatoes, ham, American cheese, and, if desired, onion. Transfer to a 3-quart rectangular baking dish, spreading mixture evenly.
  2. Combine cornflakes and butter. Sprinkle over potato mixture. Bake, uncovered, for 30 minutes. Sprinkle with mozzarella cheese. Return to oven and bake for 20 to 25 minutes more or until bubbly around the edges and heated through.

Make-Ahead Directions:

Prepare as directed in Step 1. Cover and chill for at least 8 hours or up to 24 hours. To serve, continue as directed, except bake for 50 to 55 minutes or until hot and bubbly.
