  • In a 3 1/2- or 4-quart slow cooker combine sweet potatoes, beans, ham, onion, thyme, and pepper. Pour broth over mixture in cooker.

  • Cover and cook on low-heat setting for 5 to 6 hours or on high-heat setting for 2 1/2 to 3 hours. Stir in half-and-half.

OK - I wasn't too sure about this recipe but I had lots of sweet potatoes from my CSA and leftover ham so I figured - why not? I always think of sweet potatoes as, well, sweet. Not so! In this soup, it is a good stand-in for white potato. If you are diabetic, you know to shy away from white potatoes whenever possible. Try this soup. I wasn't disappointed and saved the recipe for next summer's crop.

I also add one package organic sweet corn to this...sometimes a little red pepper (sweet) and sometimes I use butternut squash instead of sweet potatoes
