Ham and Cheese Quesadillas with Mango Salsa
Preheat oven to 300 degrees F. For mango salsa, in a small bowl combine mango, avocado, sweet pepper, cilantro, lime juice, oil, and salt. Cover and chill sauce until serving time.
In a medium bowl combine cheese, ham, onion, paprika, and chili powder; toss to combine.
To make quesadillas, lightly coat one side of each tortilla with cooking spray. Place tortillas, coated sides down, on a cutting board or waxed paper. Sprinkle about 2/3 cup of the cheese-ham mixture over half of one tortilla. Fold the tortilla in half over the filling. Repeat with remaining tortillas and filling.
Heat an extra-large nonstick skillet over medium heat for 1 minute. Cook quesadillas, two at a time, in hot skillet for 4 to 6 minutes or until lightly browned, turning once. Transfer quesadillas from skillet to a baking sheet and keep warm in the oven. Repeat with the remaining quesadillas. To serve, cut each quesadilla into three wedges. Serve with mango salsa.
