  • Thaw fish, if frozen. Rinse fish and pat dry with paper towels. Preheat oven to 425°F. Toss sweet potato wedges with 2 Tbsp. of the oil and 1/4 tsp. each of the salt and pepper. Spread sweet potatoes in a 15×10-inch baking pan. Roast 20 minutes.

  • Meanwhile, for the herb oil, stir together the remaining 3 Tbsp. oil, the thyme, and lemon zest.

  • Remove pan from oven and stir potato wedges. Push to one side of pan but keep in a single layer. Add fish and green beans to pan. Brush with herb oil and sprinkle with the remaining 1/4 tsp. each salt and pepper. Roast 10 to 12 minutes or until fish flakes easily with a fork and green beans are tender.
