Grilled Shrimp Kabobs

Ingredients

  • 1 pound fresh or frozen large shrimp in shells

  • ½ of a medium green sweet pepper, seeded and cut into 8 pieces

  • ½ of a medium red sweet pepper, seeded and cut into 8 pieces

  • ¼ of a medium fresh pineapple, peeled and cut into chunks

  • 4 green onions, cut into 2- to 3-inch pieces

  • ¼ cup low-carb barbecue sauce

Directions

  1. Thaw shrimp, if frozen. Peel and devein shrimp, leaving tails intact if desired. Rinse shrimp; pat dry with paper towels. On eight long skewers,* alternately thread shrimp, sweet peppers, pineapple, and green onions.

  2. For a charcoal or gas grill, grease grill rack. Place kabobs on the rack directly over medium heat. Cover and grill for 6 to 10 minutes or until shrimp are opaque, turning once and brushing with barbecue sauce halfway through grilling.

*Tip:

If using wooden skewers, soak in water for at least 30 minutes; drain before using.
