Grilled Red Onions with Crumbled Feta

Directions

  1. Heat grill to medium. Quarter onions lengthwise. Place in bowl of cold water; let stand 10 minutes. Drain. Drizzle with olive oil and season with kosher salt and black pepper. Transfer to grill rack. Grill 15 to 18 minutes or until charred and tender inside, turning to brown. Meanwhile, stir together the honey, chile pepper, and 1/4 teaspoon kosher salt; set aside. Serve onions topped with feta, walnuts, and chives. Drizzle with honey mixture.

To make ahead, cool onions after grilling. Cover; chill up to 24 hours. To reheat, place onions in a cast-iron skillet. Place skillet on grill rack and grill for 5 minutes or until warm, turning once. Top as directed.
