Give taco night a fresh twist by adding grilled peaches for both juiciness and smoky flavor. The sweet and savory combo is irresistible!

  • In a small food processor, combine first 8 ingredients (through the pepper) and process until smooth. Transfer chipotle mixture and pork tenderloin to a one-gallon-size resealable plastic bag, turning to coat. Seal and chill 2 to 24 hours to marinate. Remove pork; discard remaining marinade.

  • Grill pork on the rack of a covered grill using indirect medium heat 30 to 35 minutes or until done (145°F). Lightly brush peaches with canola oil; grill cut sides down, directly over heat, 2 to 3 minutes or until lightly charred. Thinly slice pork and chop peaches. Serve in corn tortillas and top with desired toppings.
