Directions

  1. In a small bowl combine goat cheese, honey, and lemon zest.
  2. Divide half of the cheese mixture among four bread slices, spreading to edges. Top with half of the fig jam; add half of the basil. Top with four more bread slices. Top with the remaining cheese mixture and the remaining fig jam; add the remaining basil. Top with the remaining four bread slices. Lightly coat the outsides of sandwiches with cooking spray.
  3. Coat a large skillet with cooking spray; heat over medium heat. Add sandwiches; cook 6 minutes or until lightly toasted, turning once. Cut each sandwich in half.
