  • Grill cucumbers, covered, over medium heat 6 to 8 minutes or just until lightly charred, turning once. Grill jalapeño pepper the last 3 to 4 minutes or until lightly charred, turning once. Chop cucumbers and jalapeño pepper.

  • Remove 1/2 tsp. zest and squeeze 1 Tbsp. juice from lime. In a medium bowl combine cucumbers, jalapeño pepper, lime zest and juice, and remaining ingredients. Serve salsa with pork, poultry, fish, or seafood.
