By Charlie Worthington Published on May 13, 2021 Print Rate It Share Share Tweet Pin Email Photo: Carson Downing Total Time: 25 mins Servings: 6 Jump to Nutrition Facts Ingredients 3 tablespoon sugar ½ teaspoon ground cinnamon ¼ teaspoon ground allspice 4 - 6 mini Manzano bananas, unpeeled, or 2 ripe but firm bananas, unpeeled 4 pineapple slices, 1/2 inch thick 2 tablespoon butter, melted ½ cup dulce de leche ⅓ cup canned unsweetened coconut milk 2 tablespoon dark rum (optional) 3 cup coconut or vanilla ice cream ⅓ cup raw chip coconut, toasted Directions Prepare grill for direct heat. In a small bowl combine sugar, cinnamon, and allspice. Leaving the peel on, cut bananas in half lengthwise. (If using regular banans, halve and cut each half crosswise into thirds.) Brush cut sides of bananas and both sides of pineapple slices with the melted butter. Sprinkle cut sides of bananas and both sides of pineapple with sugar mixture. Grill directly over medium 5 to 6 minutes or until bananas soften and peels begin to pull away and pineapple slices are charred and tender, turning pineapple slices once. Meanwhile, for sauce: In a small saucepan* combine dulce de leche, coconut milk, and, if desired, rum. Cook and stir mixture over medium-low until heated through. Coarsely chop pineapple and remove banana peels. Serve fruit over ice cream and drizzle with sauce. Garnish with toasted coconut. Serves 6. Tips To make the sauce in the microwave, stir together dulce de leche and coconut milk in a microwave-safe bowl (mixture will not be smooth). Microwave 1 minute or until warm and smooth, whisking twice. If desired, stir in rum.
