Green Machine Mocktail

Grab your juicer and go to town on this healthy mocktail. The savory (and slightly tart) drink gets its vibrant hue thanks to celery, parsley, and granny smith apples.

2 2/3 cups juice mixture

Ingredients

  • 1 pound celery, washed, root end trimmed, and cut up

  • 1 bunch fresh flat-leaf parsley with stems (3 ounces)

  • 2 Granny Smith apples, cut up, stemmed, and seeded

  • 2 lemons, juiced (1/3 cup)

  • Orange bitters

  • Prosecco or sparkling wine, chilled

  • Celery stalk and/or sliced Granny Smith apple (optional)

Directions

  1. Using a vegetable juicer, juice celery, parsley, and apples. Add lemon juice. Cover and chill up to 3 days. For each drink, pour 1/2 cup juiced mixture into a tall glass. Add a few dashes of orange bitters, and top with Prosecco. If desired, garnish with celery and/or additional apple.
