  • In a food processor or blender combine cucumber, sweet pepper, avocado, the 3/4 cup yogurt, the green onions, mint, vinegar, and garlic. Cover and process or blend until smooth. Stir in the water, salt, and black pepper. Season to taste with hot pepper sauce. Cover and chill for at least 1 hour or up to 4 hours before serving. If desired, top each serving with snipped chives and additional yogurt.
