  • In a small bowl stir together oregano, basil, lemon-pepper seasoning, and garlic powder.

  • Preheat oven to 425°F. Lightly brush the 1 tsp. olive oil over chicken. Using your fingers, evenly spread Greek Rub over chicken; place in a 15x10-inch baking pan. (For easy cleanup, line pan with foil.)

  • Place cauliflower, sweet peppers, and tomatoes in a bowl. Drizzle with the 1 Tbsp. olive oil and sprinkle with salt and black pepper. Arrange vegetables around chicken in pan.

  • Roast 20 to 25 minutes or until chicken is done (165°F.) and vegetables are tender. Cover chicken with foil; let stand 3 minutes. Serve with vegetables.

I really like how the cherry tomatoes come out of the oven. I do have to check my teeth before I smile after eating this dish for any herbs caught between 😃 But very tasty, wholesome, and easy to substitute vegetables. 🍅🥦🌽🥕
