  • Preheat oven to 425°F. Lightly brush the 1 tsp. olive oil over chicken. Using your fingers, evenly spread Greek Rub over chicken; place in a 15x10-inch baking pan. (For easy cleanup, line pan with foil.)

  • Place cauliflower, sweet peppers, and tomatoes in a bowl. Drizzle with the 1 Tbsp. olive oil and sprinkle with salt and black pepper. Arrange vegetables around chicken in pan.

  • Roast 20 to 25 minutes or until chicken is done (165°F.) and vegetables are tender. Cover chicken with foil; let stand 3 minutes. Serve with vegetables.
