Grain Salad with Greens, Cherries, and Crispy Bacon
In a medium saucepan bring 3 cups water and the farro to boiling; reduce heat. Cover; simmer 30 minutes or until tender. Drain off excess liquid.Advertisement
Meanwhile, in a large skillet cook bacon over medium until browned and crisp. Transfer to paper towels to drain, reserving drippings in skillet. Add kale to skillet by the handful, cooking and stirring until each addition is wilted. Remove skillet from heat; stir in farro, bacon, cherries, 1/2 teaspoon salt, and 1/4 teaspoon black pepper.
For dressing: In a small bowl whisk together vinegar, 3 Tablespoons olive oil, the mustard, 1/2 teaspoon salt, and 1/4 teaspoon black pepper. Add to farro mixture; toss to coat. Top with blue cheese. Serves 4.
