Grain Salad with Greens, Cherries, and Crispy Bacon


As soon as you see sweet cherries available in your local supermarket, snag a bag to make this farro grain salad. Their sweetness is balanced by salty-smoky bacon and pungent blue cheese.

  • 3 cup water

  • 1 cup uncooked farro, rinsed and drained

  • 4 slices bacon, chopped

  • 1 5 ounce package baby kale

  • 1 ½ cup fresh sweet cherries, pitted

  • 1 teaspoon salt

  • ½ teaspoon black pepper

  • ¼ cup red wine vinegar

  • 3 tablespoon olive oil

  • 1 teaspoon coarse-grain mustard

  • 2 ounce blue cheese, sliced or crumbled


  1. In a medium saucepan bring 3 cups water and the farro to boiling; reduce heat. Cover; simmer 30 minutes or until tender. Drain off excess liquid.

  2. Meanwhile, in a large skillet cook bacon over medium until browned and crisp. Transfer to paper towels to drain, reserving drippings in skillet. Add kale to skillet by the handful, cooking and stirring until each addition is wilted. Remove skillet from heat; stir in farro, bacon, cherries, 1/2 teaspoon salt, and 1/4 teaspoon black pepper.

  3. For dressing: In a small bowl whisk together vinegar, 3 Tablespoons olive oil, the mustard, 1/2 teaspoon salt, and 1/4 teaspoon black pepper. Add to farro mixture; toss to coat. Top with blue cheese. Serves 4.
