Line a 9-inch square baking pan with parchment paper, extending paper over edges. In a large bowl beat butter with a mixer on medium 30 seconds. Add brown sugar, baking soda, and salt. Beat on medium to high 1 to 2 minutes or until light and fluffy, scraping bowl as needed. Beat in eggs and vanilla. Beat in Gluten-Free Flour Mix. Stir in chopped caramels and chocolate chips. Spread dough in prepared baking pan. Bake 30 to 40 minutes or until golden. Cool in pan on a wire rack. Use parchment paper to lift bars from pan. Cut into bars. Gluten Free Flour Mix In a large airtight container whisk together rice flour, potato starch, sorghum flour, and xanthan gum. Cover and store at room temperature for up to 3 months. *Note: Regular-size Rolo candies are gluten-free, but the miniature candies are not. Always check labels to be certain.
