Gluten-Free Hot Cocoa Cupcakes

Directions

  1. Preheat your oven to 350F and line a cupcake pan with 10 paper or foil liners.
  2. Combine dry ingredients in a mixing bowl; whisk to blend. Add remaining ingredients and stir until batter is smooth.
  3. Divide batter evenly among 10 cupcake sections, then bake 12-15 minutes, until tops of cakes appear dry and spring back lightly when gently pressed. Cool cupcakes completely before decorating.
  4. To decorate the cupcakes, pipe or spread frosting on top of each cupcake, leaving a small area of chocolate cake showing around the edge.
  5. Hook a small candy cane to one side of the cupcake to resemble a teacup handle. Add mini marshmallows, mini chocolate chips, sugar snowflake decorations, or any other decoration you like to the top of your cupcakes.
