Gingered Mango Chicken

Directions

  1. If desired, in an extra-large skillet cook chicken, half at a time, over medium heat until brown on both sides. Remove from heat.
  2. Cut up any large pieces of fruit in chutney. In a 4- to 5-quart slow cooker combine chutney, chile sauce, and ginger. Add chicken, turning to coat.
  3. Cover and cook on low-heat setting for 5 to 6 hours or on high-heat setting for 2 1/2 hours. Transfer chicken to a serving platter; cover and keep warm.
  4. For sauce, if desired, strain cooking liquid. Pour cooking liquid into a medium saucepan. Bring to boiling; reduce heat. Simmer, uncovered, about 5 minutes or until reduced to 1 1/2 cups. Stir in lime juice. If desired, serve chicken over brown rice. Top with sauce and, if desired, sprinkle with green onions and serve with lime wedges.
