Directions

  1. In a 3 1/2- or 4-quart slow cooker combine pears, pineapple, cherries, apricots, orange juice concentrate, brown sugar, tapioca, and ginger.
  2. Cover and cook on low-heat setting for 6 to 8 hours or on high-heat setting for 3 to 4 hours. Spoon hot fruit mixture over hot toasted waffles. If desired, sprinkle with pecans.

To toast pecans, preheat oven to 350 degrees F. Spread nuts in a single layer in a shallow baking pan. Bake for 5 to 10 minutes or until light brown, watching carefully and stirring once or twice.
