Coat a 15x10-inch baking pan with cooking spray or line with parchment paper. In a medium bowl stir together the next five ingredients (through salt). In a large bowl beat shortening with a mixer on low 30 seconds. Gradually add the 2 cups granulated sugar. Beat until combined, scraping bowl as needed. Beat in eggs and molasses. Beat in as much of the flour mixture as you can with the mixer. Stir in any remaining flour mixture. Pat dough into the prepared pan. Sprinkle with coarse sugar. Bake 18 to 20 minutes or until set and edges are beginning to turn golden. Cool in pan on wire rack. Cut into bars.
