Ginger-Sesame Drumsticks with Ramen Slaw

Directions

  1. Make Oven-Roasted Drumsticks. Place drumsticks in a resealable plastic bag set in a shallow dish. Pour 2/3 cup of the salad dressing over chicken. Seal bag; turn to coat chicken. Marinate in the refrigerator for 30 to 60 minutes.
  2. Meanwhile, break ramen noodles into small pieces. Prepare noodles according to package directions, discarding the seasoning packet. Drain and run cold water over the noodles until chilled. Drain again.
  3. For slaw, in a medium bowl combine cooked noodles, coleslaw mix, pea pods, and green onions. Add 1/3 cup of the salad dressing; toss gently to coat. Cover and chill until ready to serve.
  4. Drain chicken, discarding salad dressing. For a charcoal grill, arrange medium-hot coals around a drip pan. Test for medium heat above pan. Place chicken on grill rack over drip pan. Cover and grill for 25 to 30 minutes or until chicken is heated through and no longer pink (180 degrees F), brushing with the remaining 1/4 cup salad dressing during the last 5 minutes of grilling. (For a gas grill, preheat grill. Reduce heat to medium. Adjust for indirect cooking. Grill as above, except place chicken in a shallow roasting pan.)
  5. To serve, add almonds to slaw; toss gently to combine. Sprinkle chicken with sesame seeds. Serve chicken with slaw.

*Tip:

To toast almonds and sesame seeds, preheat oven to 350 degrees F. Spread almonds and sesame seeds in a shallow baking pan. Bake for 5 to 10 minutes or until light brown, watching carefully and shaking pan once or twice.

Oven-Roasted Drumsticks

Directions

  1. Preheat oven to 375 degrees F. Place drumsticks in a 15x10x1-inch baking pan. Sprinkle evenly with salt and pepper
  2. Bake, uncovered, for 35 to 40 minutes or until an instant-read thermometer registers 170 degrees F. (Chicken will be cooked through but will not yet be tender.)
  3. Cool; place drumsticks in an airtight container. Cover; chill for up to 3 days. Continue as directed in Step 1.
