Ginger Date Cooler

Muddling a Medjool date adds natural sweetness, while fresh lime adds tartness and balance. Cumin, pepper, and ginger beer give this cocktail (or mocktail) a spicy kick.

Ingredients

  • 3 tablespoon (1 1/2 oz.) lime juice

  • 1 Medjool date, pitted

  • Pinch fine sea salt

  • Pinch ground cumin

  • Pinch black pepper

  • Ice cubes

  • 3 tablespoon (1 1/2 oz.) gin (optional)

  • 6 ounce ginger beer, chilled

  • Mint sprig and/or lime slice

Directions

  1. In a cocktail shaker combine first five ingredients (through pepper). Let stand 5 minutes.

  2. Muddle until date is well-mashed. Add ice and gin (if using). Cover and shake until very cold. Double strain into an ice-filled pint glass. Top with ginger beer; stir gently. Serve with a mint sprig and/or lime slice.
