Club soda adds a refreshing amount of fizz to this sparkling cider. You won't feel like you're missing a thing by drinking this non-alcoholic punch once you add a splash of the simple homemade ginger syrup. This party drink is perfect for all ages!

1 1/2 cups/360 ml Ginger Syrup, enough syrup for 12 drinks

Ingredients

  • 2 tablespoon Ginger Syrup

  • ¼ cup Apple cider, chilled

  • ½ cup club soda, chilled

Ginger Syrup

  • ½ cup grated fresh ginger (55 g)

  • 1 cup packed brown sugar (200 g)

  • 1 cup water (240 ml)

Directions

  1. For each spritzer, to a 16-0z. ice-filled glass add Ginger Syrup, apple cider, and club soda. Stir to combine. Serve immediately.

  2. To make the ginger syrup, in a small saucepan, combine the ginger, brown sugar and water and bring to a boil over high heat, stirring constantly until the sugar dissolves. Reduce the heat and simmer for 5 minutes to completely dissolve the sugar and infuse the syrup. Remove from the heat and let the ginger steep in the syrup until cool, about 30 minutes. Strain the syrup through a fine-mesh sieve placed over a container with a tight-fitting lid and then cover and refrigerate until well chilled. (The syrup will keep in the refrigerator for up to 2 weeks.)

To Serve Warm:

Omit the ice. Substitute water for the club soda and heat mixture in a saucepan until warmed through.
