Gazpacho Verde with Papaya

This chilly, refreshing gazpacho is loaded with spinach, avocado, cucumber, and celery for a veggie-filled dish. To take it to the next level, add chopped papaya and a dash of ancho chile pepper.

Gazpacho Verde with Papaya

Directions

  1. In a food processor combine first seven ingredients (through salsa) and 1/4 cup of the lime juice. Cover and process until smooth, adding additional water if needed to reach desired consistency. Season to taste with salt. Cover and chill 5 to 10 minutes.
  2. Meanwhile, in a small bowl combine remaining 1/4 cup lime juice and remaining ingredients.
  3. Serve gazpacho topped with papaya mixture.
