Garlic-Soy Marinade

This freezer-friendly marinade will work for 2 to 3 pounds of meat and freeze up to 3 months.

Ingredients

  • cup reduced-sodium soy sauce

  • ¼ cup finely chopped green onions

  • 3 tablespoon vegetable oil or olive oil

  • 2 tablespoon Worcestershire sauce

  • 2 tablespoon balsamic vinegar

  • 1 tablespoon packed brown sugar

  • 1 tablespoon fresh thyme leaves or chopped fresh Italian parsley

  • 2 cloves garlic, minced

  • ¼ teaspoon crushed red pepper (optional)

  • ¼ teaspoon black pepper

Directions

  1. For marinade, in a small bowl combine all of the ingredients, whisking to dissolve brown sugar.

  2. To use, place 2 to 3 lb. desired poultry or meat in a resealable plastic freezer bag. Add marinade. Seal bag; turn to coat poultry or meat. Lay flat in a shallow baking pan and freeze up to 3 months.

  3. To serve, thaw in refrigerator 24 to 48 hours or until no longer icy. Drain poultry or meat, reserving marinade* if desired. Cook poultry or meat as desired.

*Make a Sauce

To make the marinade into a sauce, reserve marinade. In a small saucepan combine marinade, 1/4 cup water, and 1 Tbsp. butter. Bring to boiling; reduce heat. Simmer, uncovered, 10 minutes or until slightly thickened. Makes 6 Tbsp.
