Garlic-Herb Smashed New Potatoes

This isn't a regular mashed potatoes recipe--it's smashed! Rather than mashing your new potatoes all the way, leave them slightly intact for this new spin on classic mashed potatoes.

Ingredients

  • 1 ½ pound tiny new potatoes, quartered

  • 4 cloves garlic, peeled

  • ½ of an 8-ounce package cream cheese, cubed and softened

  • ½ cup sour cream

  • 2 tablespoon butter, softened

  • ¼ teaspoon salt

  • ¼ teaspoon ground black pepper

  • 1 tablespoon snipped fresh dill

  • 1 tablespoon snipped fresh rosemary

  • 1 tablespoon snipped fresh basil

  • 2 tablespoon crumbled, crisp-cooked bacon (optional)

  • 1 tablespoon sliced green onion (optional)

Directions

  1. In a covered 3-quart saucepan cook potatoes and garlic in enough boiling lightly salted water to cover for 12 to 15 minutes or until tender; drain. Return potatoes to saucepan.

  2. Add cream cheese, sour cream, butter, salt, and pepper to potatoes. Using a potato masher or an electric mixer, mash potatoes slightly to combine ingredients. Stir in dill, rosemary, and basil. Spoon smashed potatoes into a serving bowl. Top with bacon and green onion.
