Garlic-Basil Dipping Oil
The day before:
- In a small saucepan combine oil, basil, and garlic. Cook over medium heat for 3 minutes. Reduce heat to low; cook for 3 minutes more. Remove from heat. Let stand at room temperature for 1 hour.
- Strain oil mixture through a fine-mesh sieve into a storage container; discard solids. Cover oil and chill overnight.*
- Tote oil and, if desired, cheese in an insulated cooler with ice packs. Before serving, let oil stand at room temperature for 30 minutes. Sprinkle with cheese. Serve with bread for dipping.
