Garbanzo Bean Soup with Tomatoes and Spinach

Directions

  1. In a large saucepan heat oil over medium heat. Add onions and garlic; cook and stir about 5 minutes or until onions are just tender.
  2. Add broth, garbanzo beans, and tomatoes. Bring to boiling; reduce heat. Simmer, uncovered, for 15 minutes. Stir in the spinach; heat through.
  3. Sprinkle Parmesan cheese over individual servings.
