  • Preheat oven to 350°F. In a medium bowl stir together first six ingredients (through ginger), coating nuts thoroughly. Spread in a 15x10-inch baking pan. Bake 7 to 9 minutes or just until golden, stirring twice. Stir in apricots.

  • Spread on a double-thick layer of paper towels or parchment paper to cool. Store in an airtight container at room temperature up to 1 week.


This snack is tasty using halved macadamia nuts or whole almonds in place of the cashews. If desired, add flaked coconut and/or broken dried bananas to the mix.


This recipe doubles easily.
