Ingredients

  • 1 ½ cup heavy cream

  • 1 cup powdered sugar

  • 1 ½ teaspoon vanilla

  • 8 ounce mascarpone cheese

  • ¼ cup red unsweetened Dutch-process cocoa powder, such as Guittard Cocoa Rouge

  • 1 ¼ cup plus 3 Tbsp. whole milk

  • 28 crisp ladyfingers (8.5 ounces)

  • Red Dutch-process unsweetened cocoa powder, for dusting

Directions

  1. In a large bowl combine heavy cream, 3/4 cup of the powdered sugar, and the vanilla. Beat with a mixer on medium to high until stiff peaks form. Add mascarpone; beat until combined.

  2. In a medium bowl combine the remaining 1/4 cup powdered sugar, the cocoa powder, and 3 Tbsp. of the milk. Whisk to combine and moisten all ingredients. Add the remaining 1 1/4 cups milk and stir.

  3. Soak 14 of the ladyfingers, one at a time, 4 to 5 seconds in the chocolate milk. (Be careful not to soak for too long or they will break apart.) Arrange ladyfingers in an even layer in the bottom of a 2-qt. baking dish. Spoon half of the whipped cream mixture on top of the ladyfingers, spreading evenly.

  4. Soak remaining 14 ladyfingers in chocolate milk as directed and arrange on top of the cream layer. Spread remaining whipped cream evenly over top. Dust with cocoa powder. Cover with plastic wrap; chill at least 3 hours or overnight. Serves 12.

Takeaway:

Cooking is something Ubi and his daughter Gabby like to do together (she's in charge, he's the sous chef). In fact, is was when Gabby was first born that Ubi stepped into the kitchen and started making breakfast for his family.
