Thread grapes on appetizer skewers, alternating colors. Add skewers to platter. Add pomegranate seeds (if using). For dip, in a small bowl stir together mascarpone cheese, maple syrup, and remaining 1 Tbsp. lemon juice. Serve dip with fruit.
