Fruit and Vinegar Mash

Directions

  1. In a small saucepan bring 1/2 cup cider vinegar to boiling: remove from heat. In a food processor or blender combine the hot vinegar, 2 cups chopped fresh strawberries, 1 cup chopped fresh pineapple, dash salt, dash ground nutmeg, and dash cayenne pepper. Cover and process or blend until slightly chunky. Cool to room temperature. Store in the refrigerator for up to 1 week.

Uses

Spoon over cooked meats, salad greens, pound cake, or ice cream. Or combine with sparkling water and ice for a refreshing beverage.

Cilantro-Mango Mash:

Prepare as directed, except substitute chopped ripe mango for the strawberries and 2 teaspoons snipped fresh cilantro for the nutmeg.
