Recipe frosts the tops and sides of two 8- or 9-inch layers. (Halve the recipe to frost a 13x9x2-inch cake.) Makes about 4 cups.

Prepare Butter Frosting as directed, except beat 1/2 cup unsweetened cocoa powder into butter before adding the powdered sugar.

Citrus Butter Frosting:

Prepare Butter Frosting as directed, except substitute 1/2 cup fresh lemon, orange, or lime juice for the 1/2 cup milk and add 1/2 teaspoon finely shredded lemon or lime peel or 1 teaspoon finely shredded orange peel with the juice.

Coffee Butter Frosting:

Prepare Butter Frosting as directed, except omit vanilla and substitute 1/2 cup strong brewed coffee for the 1/2 cup milk.

Almond Butter Frosting:

Prepare Butter Frosting as directed, except substitute 1/2 teaspoon almond extract for the vanilla.

Peppermint Butter Frosting:

Prepare Butter Frosting as directed, except substitute 1 teaspoon peppermint extract for the vanilla. If desired, stir in 1/4 cup crushed peppermint candies.
