Press into the bottom of a 9-inch springform pan brushed with butter or coated with nonstick cooking spray. Stand some whole animal cookies in the crust mixture around the edge of the pan, with the tops of the cookies facing out. Chill crust while making the filling. In a large bowl combine cream cheese and granulated sugar with an electric mixer until smooth. Add sour cream and lemon juice; mix thoroughly and set aside. In another large bowl beat heavy cream, powdered sugar, vanilla, and almond extract until stiff peaks form. Gradually fold cream cheese mixture into whipped cream mixture until smooth. In a blender combine strawberries and jam. Blend until smooth. Spread half of the cream cheese mixture into the springform pan. Drizzle with half of the strawberry mixture and smooth to an even layer. Repeat with remaining cream cheese mixture and strawberry mixture. Cover and chill overnight. Top with sweetened whipped cream and sprinkles before serving.
