Prepare Baked French Toast as directed, except use whole wheat bread in place of the brioche or challah and reduce the chilling time to 1 hour. Do not make the Spiced Maple Syrup.
In a medium saucepan heat butter over medium heat until melted. Add pears, the water, sugar, brandy (if using), cinnamon, and nutmeg. Cook and stir about 5 minutes or just until pears are tender. Gently stir in maple syrup; heat through.
Serve French toast with pear mixture and, if desired, whipped cream.
