Flatbread with Pears, Fresh Baby Greens, and Gorgonzola
Preheat oven to 400 degrees F. Place one whole wheat flatbread on a baking sheet. Lightly coat top of flatbread with nonstick cooking spray. Bake for 4 to 6 minutes or until crispy and edges are browned. Top with 1/2 of a pear, cored and thinly sliced. Sprinkle with 2 Tbsp. shredded smoked gouda or fontina cheese. Bake for 2 minutes more or until cheese melts. Mix 1 1/2 cups baby greens with 1 Tbsp. light balsamic vinaigrette. To serve, place salad on top of flatbread and sprinkle with 1 Tbsp. crumbled Gorgonzola cheese and 2 tsp. toasted walnut pieces.
