Citrus is the star of the steak marinade that adds amazing flavor to this grilled dinner recipe. Serve these Cuban steaks with grilled plaintains or a pile of rice.

Ingredients

  • 4 beef shoulder top blade (flat-iron) steaks, cut 3/4 to 1 inch thick (1-1/2 pounds)

  • cup olive oil

  • 2 - 3 tablespoon finely shredded orange peel*

  • ½ cup orange juice*

  • cup finely chopped red onion (1 small)

  • 1 tablespoon finely shredded lime peel*

  • ¼ cup lime juice*

  • 2 teaspoon finely shredded lemon peel*

  • 3 tablespoon lemon juice*

  • 6 cloves garlic, minced

  • 2 teaspoon dried oregano, crushed

  • 2 teaspoon ground cumin

  • 1 teaspoon salt

  • ½ teaspoon black pepper

Directions

  1. Trim fat from steaks. Place steaks in a large resealable plastic bag set in a shallow dish. For marinade, in a medium bowl stir together oil, orange peel, orange juice, onion, lime peel, lime juice, lemon peel, lemon juice, garlic, oregano, cumin, salt, and pepper. Set aside 1/2 cup of the marinade until ready to serve.

  2. Pour the remaining marinade over steaks in bag; seal bag. Turn to coat steaks. Marinate in the refrigerator for 1 to 2 hours, turning bag occasionally. Drain steaks, discarding marinade.

  3. For a charcoal grill, grill steaks on the rack of an uncovered grill directly over medium coals to desired doneness, turning once halfway through grilling. Allow 7 to 9 minutes for medium rare (145°F) or 10 to 12 minutes for medium (160°F). (For a gas grill, preheat grill. Reduce heat to medium. Place steaks on grill rack over heat. Cover; grill as directed.)

  4. Before serving, drizzle steaks with the reserved 1/2 cup marinade.

*Tip:

To get enough citrus peel and juice for the marinade, use two oranges, two limes, and one lemon.
