Fast Nicoise Salad

Can't decide what to pack for lunch? Try this 20-minute Nicoise salad that features tuna, leafy greens, potatoes, and a simple homemade vinaigrette dressing.

Ingredients

  • 2 teaspoon butter

  • 2 cup refrigerated red potato wedges

  • 6 cup mixed salad greens

  • 3 2.6 ounce pouches lemon-pepper chunk light tuna*

  • 1 cup cherry tomatoes

  • 2 hard-cooked eggs, sliced

  • 2 tablespoon white wine vinegar

  • 2 tablespoon olive oil

  • ½ teaspoon Dijon-style mustard

  • teaspoon ground black pepper

Directions

  1. In a large skillet melt butter over medium heat. Add potatoes. Cover and cook about 15 minutes or until golden brown, stirring occasionally. Cool completely.

  2. In four salad containers evenly layer salad greens, tuna, tomatoes, egg slices, and potatoes. Cover and chill for 2 to 24 hours. In a small bowl whisk together the vinegar, olive oil, mustard, and black pepper. Divide dressing among four small containers. Cover and chill for 2 to 24 hours.

  3. To serve, shake dressing. Drizzle one dressing portion over one salad portion. Cover and shake to combine or toss with a fork to combine.

*Tip:

If you can't find lemon-pepper tuna, use any herb-seasoned tuna.

To Take:

To tote, place salad and dressing containers in an insulated bag with an ice pack.
