Directions

  1. Place skirt steak pieces in a shallow dish. Drizzle all sides of steak pieces with the lime juice and 2 tablespoons vegetable oil; sprinkle with the three cloves minced garlic, kosher salt, and black pepper. Cover and marinate in the refrigerator for 30 minutes.
  2. Preheat broiler. Remove steak from marinade; pat dry with paper towels. Lightly coat a large skillet with remaining 1 tablespoon vegetable oil. Cook steak in hot oil over medium-high heat for 6 to 8 minutes or just until slightly pink in center, turning once halfway through cooking time. Transfer steak to a cutting board.
  3. Meanwhile, in a large bowl combine onion, sweet pepper, chile pepper, and tomato. Add the olive oil, tossing to coat; stir in cumin, coriander, and, if desired, sprinkle with salt and pepper. Spread vegetable mixture on a large baking sheet; broil 4 to 5 inches from the heat about 4 minutes or until skins are blistered. Stir vegetables; broil for 2 to 3 minutes more or until tender. Remove from oven; set aside.
  4. Thinly slice steak pieces against the grain; add to the broiled vegetables on the baking sheet. Sprinkle cheese on top; broil about 1 minute more or until cheese is melted. Serve fajita mixture with flour tortillas and salsa.
