Directions

  1. In a small bowl sprinkle 1/4 cup of the milk with gelatin. Let stand 5 minutes. Meanwhile, in a medium saucepan whisk together egg yolks and sugar. Gradually whisk in remaining 1-3/4 cups milk. Cook and stir over medium heat just until boiling. Remove from heat.
  2. Gradually whisk about 1/2 cup of the hot mixture into gelatin mixture; return to remaining hot mixture in saucepan. Place saucepan in a large bowl of ice water. Add vanilla, stirring for a few minutes to cool mixture. Transfer 1/2 cup of the mixture to a small bowl; stir in espresso powder.
  3. Pour remaining mixture into four 6-oz. dessert bowls, custard cups, or glasses. Cover and chill 15 to 20 minutes. Drizzle with espresso mixture; lightly swirl into top of custard.* Cover loosely and chill at least 4 hours or until set. If desired, top with espresso beans or whipped topping.
