Escarole Bistro Salad with Bacon

Ingredients

  • 4 slices bacon, chopped

  • ½ cup coarse bread crumbs* or panko

  • 4 cloves garlic, minced

  • 2 tablespoon chopped fresh parsley

  • ¼ cup olive oil

  • 1 shallot, finely chopped

  • ¼ cup red wine vinegar

  • 1 tablespoon Dijon mustard

  • ½ teaspoon salt

  • ¼ teaspoon ground black pepper

  • 1 small head escarole, trimmed and leaves separated

  • Lemon wedges

Directions

  1. In a large skillet cook bacon over medium until browned and crisp; transfer to paper towels to drain, reserving drippings. Add bread crumbs and 2 cloves garlic to skillet. Cook and stir 2 minutes or until bread crumbs are browned. Transfer to a small bowl; stir in bacon and chopped parsley.

  2. Add 1 tablespoon olive oil to skillet. Heat over medium. Add remaining garlic and the shallot to skillet, stirring to scrape up any browned bits. Cook and stir 2 minutes. Remove from heat. Stir in vinegar, mustard, salt, and black pepper until combined. Whisk in remaining olive oil.

  3. Arrange escarole on a platter. Spoon dressing over. Top with bread crumb mixture and, if desired, additional parsley. Serve with lemon wedges. Serves 4.
