Grease a 2-quart square baking dish. In prepared baking dish combine croutons and cheese; set aside. In a medium bowl whisk together eggs, milk, mustard, and pepper. Pour egg mixture over croutons and cheese in baking dish. Bake in preheated oven about 40 minutes or until knife inserted near center comes out clean. Meanwhile, prepare Cajun Sauce. Let casserole stand for 10 minutes before serving. Serve with Cajun Sauce. Cajun Sauce In a medium saucepan combine tomatoes with green pepper and onion, Cajun seasoning, sugar, and black pepper. Bring to boiling; reduce heat. Simmer, uncovered, about 10 minutes or until mixture is slightly thickened and reduced to 1-1/4 cups. Stir in pimiento-stuffed green olives; heat through. Makes 1-1/2 cups.
