For sauce, in a small bowl combine apricot spreadable fruit, water, orange juice concentrate, and honey; cover and chill.
In a medium bowl combine ricotta cheese, powdered sugar, 2 tablespoons of the crystallized ginger, and the vanilla. For each wonton, place a wonton wrapper on a flat surface. Spoon a slightly rounded tablespoon of the ricotta mixture in center of wonton wrapper. Moisten edges with water. Fold wrapper over filling to form a triangle; press edges to seal. Repeat with remaining wrappers and remaining filling.
In a heavy saucepan heat 2 inches of oil to 365 degrees F. Fry wontons, 3 at a time, about 1-1/2 minutes or until golden brown, turning once. Drain on paper towels .
Sprinkle remaining crystallized ginger over sauce; serve with warm wontons. Makes 20.
