Directions
- Preheat oven to 350 degrees F. In a small mixing bowl stir together pecans or walnuts, snipped thyme, and pepper. Spread nut mixture evenly on a baking sheet. Bake for 5 minutes, stirring once. Remove from oven; cool completely.
- Roll and form cheese into various shapes using several teaspoons at a time for smaller shapes and 1 to 2 tablespoons for larger shapes. Roll some of the cheese shapes in cooled toasted nut mixture. Roll remaining cheese shapes in radicchio, pistachios, almonds, chervil, and/or fresh thyme. Place coated cheeses on a wax-paper-lined baking sheet. Cover and chill at least 1 hour or up to 8 hours.
- To serve, arrange various shaped cheeses on chilled serving platters. Surround with cut fresh fruits, if desired. Serve with assorted crackers. Makes 12 servings.
