Edamame-Berry Salad with Pasta

With all the bright colors in the salad recipe, you know it's packed with nutrition and thanks to a bold ginger dressing, it's also packed with flavor.

Edamame-Berry Salad with Pasta

  • ½ cup frozen shelled edamame

  • 1 cup dried radiatore or rotini pasta

  • 3 cup shredded napa cabbage

  • 2 cup shredded romaine lettuce

  • 1 cup halved fresh strawberries

  • ¾ cup fresh julienned carrots

  • ¾ cup fresh snow pea pods, trimmed and halved

  • 1 small yellow sweet pepper, cut into thin bite-size strips

  • ¼ cup thinly sliced green onions

  • 1 recipe Ginger Dressing

  • Desired Protein Choice

Ginger Dressing

  • 3 tablespoon rice vinegar or cider vinegar

  • 2 tablespoon reduced-sodium soy sauce

  • 1 tablespoon canola oil

  • 4 cloves garlic, minced

  • 2 teaspoon grated fresh ginger

  • 1 teaspoon sesame oil

  • teaspoon crushed red pepper


  1. Cook edamame according to package directions; drain. Cook pasta according to package directions; drain. Rinse both with cold water; drain again.

  2. In a very large bowl combine cooked edamame, pasta, and the next seven ingredients (through green onions). Toss to combine.

  3. Drizzle Ginger Dressing over salad. Toss gently to coat. Add Desired Protein Choice to salad.

Ginger Dressing

  1. In a screw-top jar combine all ingredients. Cover and shake well.
