  • 1 pound ground beef or uncooked ground turkey

  • 1 15 ounce can black-eyed peas, rinsed and drained

  • 1 15 ounce can black beans, rinsed and drained

  • 1 15 ounce can red kidney beans, rinsed and drained

  • 1 15 ounce can chili beans in chili gravy, undrained

  • 1 14.5 ounce can Mexican-style stewed tomatoes, undrained and snipped

  • 2 14.5 ounce cans lower sodium beef broth

  • 1 11 ounce can whole kernel corn with sweet peppers, drained

  • 1 1.25 ounce envelope taco seasoning mix

  • Desired toppings: shredded cheese, sliced jalapeños, chopped avocado, snipped cilantro, and/or tortilla chips (optional)


  1. In a large skillet cook ground meat over medium-high heat until browned. Drain fat if necessary.

  2. In a 4- to 6-quart slow cooker combine meat and next eight ingredients (through taco seasoning mix).

  3. Cover and cook on low 6 to 8 hours or on high 3 to 4 hours. If desired, serve with desired toppings.
