Prepare Pastry for Double-Crust Pie. On a lightly floured surface use your hands to slightly flatten one pastry ball. Roll out pastry to a 14-inch circle. Line a 9-inch deep-dish ceramic or glass pie plate with a pastry circle. For filling, in an extra-large bowl stir together sugar, flour, and cinnamon. Add apples; toss to coat. Transfer filling to pastry-lined pie plate. Trim bottom pastry to edge of pie plate. Roll out remaining pastry into a 14-inch circle. Cut slits in pastry circle; place on filling and seal. Crimp edge. If desired, brush top pastry with milk and sprinkle with additional sugar. Place a foil-lined baking sheet on rack below pie in oven. Bake 15 minutes. Reduce oven temperature to 375°F. Bake 50 to 60 minutes more or until filling is bubbly in center. If needed to prevent overbrowning, cover pie loosely with foil the last 10 to 15 minutes. Cool on a wire rack. Pastry for Double-Crust Pie Stir together all-purpose flour and salt. Using a pastry blender, cut in shortening until pieces are pea size. Sprinkle 1 tablespoon cold water over part of the mixture; gently toss with a fork. Push moistened dough to the side of the bowl. Repeat, using 1 tablespoon cold water at a time, until all the dough is moistened. Basic Apple Pie Prepare as directed, except use a standard 9-inch pie plate and roll pastry circles to 12-inch diameters. Use 1/2 to 3/4 cup sugar and reduce flour to 2 Tbsp. and apples to 6 cups.
