  • Place ice cream in a large chilled bowl; stir until softened. Gradually stir in eggnog. If desired, stir in rum.

  • Transfer to a punch bowl; add desired amount of ginger ale to reach desired consistency. If desired, top each serving with additional peppermint ice cream and peppermint sticks. Makes 18 (4-ounce) servings.

I remember making this with Cream Soda, not Ginger Ale. Not sure I'd like the Ginger Ale version. This can be made with vanilla ice cream if you can't find the peppermint. Just crush the candy canes up and mix them into the punch to get the flavor.
