Double-Chocolate S'mores Banana Bread

To coarsely crush the graham crackers for this quick bread recipe, pulse them in a food processor or crush them in a resealable plastic bag using a rolling pin.

Ingredients

  • 1 ½ cup all-purpose flour

  • ½ cup unsweetened cocoa powder

  • 1 teaspoon baking powder

  • ½ teaspoon baking soda

  • ½ teaspoon salt

  • 2 eggs, lightly beaten

  • 1 ½ cup mashed bananas (4 to 5 medium)

  • ½ cup granulated sugar

  • ½ cup packed brown sugar

  • ½ cup vegetable oil

  • 1 teaspoon vanilla

  • 1 cup milk chocolate chips

  • 1 cup coarsely crushed graham crackers

  • 1 cup vanilla marshmallow bits (such as Kraft Mallow Bits)

Directions

  1. Preheat oven to 350°F. Grease a 9x5-inch loaf pan. In a large bowl combine the first five ingredients (through salt). Make a well in the center of the flour mixture.

  2. In a medium bowl combine the next six ingredients (through vanilla). Add egg mixture all at once to the flour mixture. Stir just until moistened. Fold in 3/4 cup of the chocolate chips, 3/4 cup of the graham crackers, and 3/4 cup of the marshmallow bits. Transfer batter to prepared pan. In a small bowl combine the remaining 1/4 each chocolate chips, graham crackers, and marshmallow bits; sprinkle over batter.

  3. Bake 1 hour or until a toothpick inserted in the center comes out clean. Cover with foil the last 10 minutes of baking, if necessary, to prevent overbrowning. Cool in pan on a wire rack 10 minutes. Remove from pan. Cool completely on a wire rack.
