- In a blender container combine raspberries, white grape juice, sugar, raspberry liqueur or orange liqueur, and lemon peel or orange peel. Cover and blend until smooth. Press mixture through a sieve to remove seeds; discard. Add additional white grape juice, if necessary, to equal 3 cups mixture.
- Transfer mixture to an 8x4x2-inch or 9x5x3-inch loaf pan. Cover and freeze about 4 hours or until firm. Break the frozen mixture into small chunks. Transfer chunks to a chilled mixing bowl. Beat with an electric mixer on medium speed until smooth but not melted. Return quickly to the loaf pan. Cover and freeze until firm.
- To serve, scrape across top with spoon, mound into dessert dishes. Makes 6 to 8 servings (3 cups).
