Directions

  1. In a blender container combine raspberries, white grape juice, sugar, raspberry liqueur or orange liqueur, and lemon peel or orange peel. Cover and blend until smooth. Press mixture through a sieve to remove seeds; discard. Add additional white grape juice, if necessary, to equal 3 cups mixture.
  2. Transfer mixture to an 8x4x2-inch or 9x5x3-inch loaf pan. Cover and freeze about 4 hours or until firm. Break the frozen mixture into small chunks. Transfer chunks to a chilled mixing bowl. Beat with an electric mixer on medium speed until smooth but not melted. Return quickly to the loaf pan. Cover and freeze until firm.
  3. To serve, scrape across top with spoon, mound into dessert dishes. Makes 6 to 8 servings (3 cups).
