In a small bowl dissolve tea mix in cold water. Set aside.
In another small bowl dissolve gelatin in boiling water. Stir in tea mixture. Cover and chill until partially set (the consistency of unbeaten egg whites), about 1 hour.
Meanwhile, lightly coat a 3-cup gelatin mold with cooking spray. Fold chopped peaches into gelatin mixture. Pour into prepared mold. Cover and chill for 2 to 24 hours. Before serving, remove gelatin from mold. Garnish with dessert topping. Makes 6 servings.
